Cook the Book:  Art of the Pie – Shaker Lemon Pie

Waking up to the pitter patter of rain on a Sunday morning, I realized that the weather has foiled my plans to go to the Zoo. I was not disappointed, however.  Something about being at home when it rains feels very comforting. I took this as a sign to make pie.

I had joined the Food52 Cookbook Club Facebook page recently and this month’s book is Art of the Pie by Kate McDermott. Skimming through the pages, the recipe for shaker lemon pie caught my eye.  Mostly because the filling only had 4 ingredients: lemon, sugar, eggs, and salt. And so my Sunday began…
